About Andrew Rosales: “I was a Division I Rower at Fairfield University, and President of the Tennis Club. I was a DJ for 6 years. My most memorable dining experiences have been at El Bulli, where I had the chance to meet Ferran Adria, who changed the way I perceive the entire dining experience. I’m an avid red wine drinker and a vintage 2009-2011 Syrah is my favorite. I also enjoy being a leadership servant and working in the community with socioeconomically disadvantaged teens, play tennis, cook, snow skiing, and travel.”
During times when the world needs to be unified, we seek to find ways to bring us together. One that many chefs know is food! It is this where many derive their inspiration on taking up cooking or baking for others. For Andrew, his love for food and bringing people together was his inspiration to follow this culinary path. Also, his cousin who had the opportunity to train under Paul Bocuse in Lyon.
Many students are nervous to begin this journey, therefore , we encourage our students to give each other advice, help, and guidance. We asked Andrew what are some of the most important things he has learned at CIL and what would you describe your experience like. He says,
“The 3 P’s: Be Punctual, Be Professional, Be Proud.”. “I am a driven and self-motivated student. I thoroughly enjoyed my Nutrition/ Sanitation and Safety course with DeLuna. The teachers are there to help, don’t be afraid to ask questions and put in additional time to get to know your instructors.”.
Overall here is his advice to anyone interested in studying at Culinary Institute LeNôtre. “Your attitude, not your aptitude, will determine your altitude. If you can dream it, you can achieve it.”.
