Bio:

Chef Laurent began his cooking interest at the age of 16 years old.  Chef Laurent entered into an 2 year apprenticeship program where he would attend school one week a month and work for qualified Chefs, in their establishments, during the following weeks in the month.  His work experience has included many restaurants and large scale operations in the North and South of France.  Chef Laurent used the work experience to open up his own chain of bistro style restaurants along the Coast of Normandy and has a Chef and employees who still run his operations while he teaches at the Culinary Institute LeNotre.

Class Room Environment:

Laurent is a charismatic Chef whom the students love.  His outgoing personality is intertwined in his teaching style making students feel welcome as he teaches French Cuisine technique to the beginners in level 1 cuisine.  Chef Laurent focuses on teaching the basic technique of "mise en place", knife skills, cooking techniques, protein fabrication, and the five "mother" sauces.  His personality may be laid back but his expectations for the student are clear.  Chef Laurent is quick to correct mistakes as his directive style management is a necessary aproach for the apprentice.
