CIL has developed 4 advanced certificates for anyone who see Baking and Pastry through an artist’s lens, offering a comprehensive 10 weeks curriculum in Advanced Artistic Skills Of Pastry Décor -an unparalleled hands-on experience in small classes led by knowledgeable chefs. Whether you are a home baker with aspirations of starting your own business or a pastry chef who wants to expand your range, this training is made for you.

The 4 LeNôtre Artistic Skills of Pastry Décor Seminars can be taken separately or combined:

– Advanced Specialty Cakes Decor Seminar (3 weeks)
– Advanced French Chocolate Showpieces Seminar (3 weeks)
– Advanced French Sugar Showpieces Seminar (2 weeks)
– Advanced Wedding Cake Decor Seminar (2 weeks)

Successfully completing the four seminars will give you four LeNôtre Artistic Skills of Pastry Décor Certificates.

Advanced Specialty Cakes Décor Seminar

3 Weeks (54 clock hours)

Students will learn to build gum paste flowers in a intricate and detailed manner and focus on two techniques of coloring their flowers: airbrushing / dusting and steaming. Students will be introduced to a new gelatin technique where they will learn to build designs from gelatin such as flower, ribbon, ruffles and skirts). This will culminate in the design and execution of a specialty cake with Advanced decor.

Seminar Class is scheduled between the hours of 8:00 a.m. and 10:00 p.m. Monday Thru Friday.

  • 8:00 a.m. – 12:30 p.m. (morning classes)
  • 1:00 p.m. – 5:30 p.m. (afternoon classes)
  • 5.30 p.m. – 10:00 p.m. (evening classes)

Advanced French Chocolate Showpieces Seminar

3 Weeks (54 clock hours)

The French Chocolate Showpiece seminar is designed to give students hands-on experience creating and building chocolate showpieces. Students will explore / learn the many techniques and key components that go into the design and production of a chocolate showpiece. Students will expand on their knowledge of tempering chocolate, the casting process, modeling, carving, volutes decor creation, and vertical assembly. Students will learn to create chocolate showpiece decorations such as flowers and flower petals and learn the techniques of chocolate spraying.

Seminar Class is scheduled between the hours of 8:00 a.m. and 10:00 p.m. Monday Thru Friday.

  • 5.30 p.m. – 10:00 p.m. (evening classes)

Advanced Wedding Cake Decor Seminar

2 Weeks (36 clock hours)

Students begin with a lecture to introduce them to a new wedding cake technique – the fountain wedding cake style. Students will then begin their practice of lace decor and learn piping techniques with increased detail from prior levels; such as string piping. Students will focus on proper techniques for icing and filling cakes such as filling, montage and masquage. Students will practice fondant creation, rolling, laminating and layering cakes with increased difficulty due to the introduction of new cake shapes.

Seminar Class is scheduled between the hours of 8:00 a.m. and 10:00 p.m. Monday Thru Friday.

  • 1:00 p.m. – 5:30 p.m. (afternoon classes)
  • 5.30 p.m. – 10:00 p.m. (evening classes)

Advanced French Sugar Showpieces Seminar

2 Weeks (36 clock hours)

Students will build on sugar techniques learned in prior levels such as cooking, casting sugar, and blowing sugar. During these two weeks, students will perfect the techniques that allow them to build sugar showpieces with greater intricacies and structure.

Seminar Class is scheduled between the hours of 8:00 a.m. and 10:00 p.m. Monday Thru Friday.

  • 1:00 p.m. – 5:30 p.m. (afternoon classes)
  • 5.30 p.m. – 10:00 p.m. (evening classes)
