The most important? Know your sauces and from Chef Cedric saying be “You”.

• Describe your classroom experience / academic classes and labs/ any anecdote?
I’ve had great experiences in both! I had Chef Cedric for 4 abs and he drilled us on technique that we all had nightmares about because we would have to remake the whole dish again and again, but that was definitely worth it!

• What was your inspiration that led you to wanting to become a chef?
When High School began I was so lost. Everyone began to find their niche and I was always the oddball. Then I discovered my passion for food. the ability to bring people together and give them a memorable experience is what I love.

• What did you do before culinary school?
Before culinary school, I was a pawnbroker. It paid the bills but it wasn’t where I wanted to be. as a single mom, you do what you have to.

• If a different field, why the change?
After years of putting my career on the back burner, I finally decided to pursue my career in the culinary field. I felt I owed it to my son and myself! I wanted something for myself, something to call my own.

• What is the most important thing you learned so far at CIL? Do you have a specific
Everything you do has to be done with love whole heartedly. Your work is your signature.

• Describe your classroom experience / academic classes and labs/ any anecdote?
Academic classes were a breeze, but they definitely set the foundation for what happens next. Labs are more intense but the hands-on experience is worth it. My chefs never hesitate to pull me aside if they see me struggle and always have little tips to help. Once the term is over, it’s gratifying!

• What are your projects for after graduation?
After graduation,I would like to start offering cooking classes. Eventually, making it a business.

• What is your favorite food or beverage?
My favorite foods are pasta, literally any pasta!  For dessert, it would be a peach cobber and a beverage of choice would have to be a sweet tea. I’m a typical native Texan!

• What is the best meal you’ve ever had? (The food, the place, the people, the experience…)
Some of the best meals I’ve had are here at school! I love when we present our meals for the day and explain our work. Trying everyone else’s food and see how happy they are to present their/our work of art is invigorating.

• What is your favorite restaurant in Houston?
One of my favorite restaurants is a small diner called “House of pies”. It’s opened 24/7 and their peach cobbler à la mode is always my weakness!
