Chef Cedric Gavoille created a sophisticated menu emphasizing a healthy diet by reducing fat, sugar, and salt content. In addition, Culinary Institute LeNôtre donated 5% of all proceeds from the meal to the Oliver Foundation, dedicated to the prevention of childhood obesity. Guests also enjoyed French wines selected by Alain LeNôtre and participated in a draw to win a night in a Granduca Hotel Suite.
This event was a real tribute to today’s French Gastronomy: vibrant, healthy, open and innovative, while remaining true to its values of sharing, pleasure, and respect for good food and for the planet. “Talking about cuisine – French cuisine – is also talking about joie de vivre, delicacy, optimism, and pleasure” said Ducasse. All values they were showing all throughout the evening.
