Recently, LENOTRE had the honor of welcoming Chef Mario Da Silva, executive sous chef from Le Jardiner, to tour our campus! โฃ
@chefdasilva, born in Venezuela, began his culinary journey at 17, studying Gastronomic Science at the University of Yaracuy while gaining hands-on experience in hotels and catering. His passion led him to train under renowned Chef Carlos Garcia (@chefcarlosgarciar) at Alto, the only Venezuelan restaurant ranked on the LATAM 50 Best Restaurants list.

As sous chef to Chef Humberto Arrieti (@humbertoarrieti), Da Silva joined Venezuela Gastronomica, a prestigious collective dedicated to celebrating and promoting Venezuelan cuisine. In 2016, he moved to the U.S., helping launch five casual dining concepts before returning to fine dining.โฃ
Currently, Da Silva serves as Executive Sous Chef with the Bastion Collection at Le Jardinier (@lejardinierhouston), where he remains devoted to seasonality, quality ingredients, and a deep sense of place principles that define his culinary philosophy. โฃ
