WINNERS of the PURATOS Sandwich Competition!

Live Sandwich Competition Showdown at CULINARY INSTITUTE LENOTRE®

On October 2nd, the CULINARY INSTITUTE LENOTRE® (CIL) hosted the 3rd Annual Puratos Sandwich Competition. The eleven finalists battled it out with their own recipes using nine different breads provided by Puratos.

CIL worked in partnership with Puratos USA to select the competing finalists from a pool of over 30 recipe entries by CIL’s current students and alumni.  Prizes were provided by Puratos, who donated $2250 in scholarship money and added this year a week training at their headquarters!

The sandwiches were judged on taste, ease of preparation, innovation, creativity, and presentation.

  • Earning first place with a $1000 scholarship and a week training at PURATOS headquarters, Andrew Hernandez won with his recipe Wagyu Pastrami Rueben. His recipe featured a deliciously pickled Wagyu brisket.
  • In second place was Tiffaney Shine with her Jalapeno Popper Chicken Hangover with $750 scholarshipA decompressed Jalapeno Popper in PURATOS potato sourdough roll was one to taste.
  • Winning third was last years winner, Luis Marenco with his recipe Chorizo Pulled Pork with Elote Slaw with $500 scholarship

In addition, the judges felt it was necessary to include a 4th place as there was a stand out sandwich by student Pedro Ott with his recipe Flat Bread Feta Caprese Jardinier.

Contestants who didn’t make it this time will be able to resubmit recipes around new bread concepts in 2019 to Chef Christelle Pradat.

The creative and prize winning Caesar Salad was VEGAN!

On September 27th, the CIL team, Chef Benoît (Chef instructor Cuisine), Chef Sebastien (Head Chef instructor Cuisine) and chef student Melissa, took on the 34th Caesar Salad Competition. We are proud to not only say they won the creative category but they integrated the Vegan lifestyle of eating to their creation.

“The north Houston culinary school prepared a special vegan salad that won most creative for its perfect execution of the Caesar salad flavor profile using all vegan ingredients. This included fried egg plant, a dairy-less cheese, and an egg-less Caesar dressing that could have just as easily won the traditional competition on taste alone.” -Carlos Brandon, Houston Press contributor

The food industry continues to change and grow for a healthier lifestyle and this team demonstrated the ability to adapt and keep the traditional flavors. Congratulations to our team, we are very proud of you all.
